Sweet Potato Muffins Ingredients - 3 1/2 cups flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons cinnamon
- 1 teaspoon salt
- 3 cups sugar
- 1 cup oil
- 4 eggs, beaten
- 3/4 cup buttermilk
- 1 1/2 teaspoons vanilla extract
- 2 cups mashed cooked sweet potatoes
- 1 cup chopped pecans (optional)
Preparing Heat oven to 350°F. Sift flour, baking soda, cinnamon and salt into large mixer bowl. Add sugar, oil, eggs and buttermilk; mix well. Stir in vanilla, sweet potatoes and pecans.
