Strawberries with Cannoli Cream
Yield: 4 servings
Ingredients
- 1 (1 pound) package strawberries, rinsed, dried, hulled and cut in half or quarters
- 1/2 cup part-skim Ricotta
- 2 tablespoons confectioners' sugar
- 1/8 teaspoon grated orange peel
- 2 tablespoons orange juice
- 1/2 teaspoon vanilla extract
- 2 drops almond extract
- 2 teaspoons chopped semi-sweet chocolate
Preparing
In food processor or blender, combine ricotta, sugar, orange
peel and juice, vanilla and almond extracts. Process or blend until very smooth. Stir in
chocolate. Cover and refrigerate until ready to serve.
To serve, divide berries among bowls or stemmed glasses. Stir
cream and pour over berries.
