Potato Cakes Ingredients - 4 cups mashed potatoes
- 2 eggs, beaten
- 1 tablespoon chopped parsley
- 1/3 cup all-purpose flour
- 1/2 teaspoon onion salt or 1 tablespoon chopped onion (optional)
Preparing In a large mixing bowl combine potatoes, beaten eggs, and parsley. Stir in onion salt or onion, if desired. Form into patties and dredge in flour.
