Sherried Pomegranate Gelatin

Ingredients

  • 2 packets unflavored gelatin
  • 1/2 cup medium-dry sherry
  • 1 cup seedless red grape halves
  • 3 tablespoons fresh pomegranate seeds

Preparing

In a large saucepan, sprinkle the gelatin over 1 cup of grape juice. Let stand for 3 to 4 minutes, until the gelatin softens, then stir over low heat until the gelatin completely dissolves.

Pour the mixture into a medium-sized bowl. Add the remaining grape juice and the sherry. Place the bowl in a larger bowl filled with ice and water, and stir occasionally until the mixture is almost set - about 30 minutes (it should be thick and lumpy).

Using a rubber spatula, gently fold in the grapes and pomegranate seeds, distributing the fruit evenly. Pour into a glass serving dish and chill for several hours.
