Pepper Relish Ingredients - 6 large red peppers
- 6 large green peppers
- 8 medium onions
- 1 cups water
- 3 cups vinegar
- 1 1/2 cups sugar
- 1 1/2 tablespoons kosher salt
- 1 1/2 tablespoons mustard seed
Preparing Clean and trim the vegetables. Put through a food grinder on a coarse setting or dice into small cubes. Put into a 5-quart pot and cover with boiling water, mixing well. Let stand 5 minutes; drain thoroughly. Return to the pot. Add the 1 cup of water and the vinegar. Bring to a boil and immediately remove from heat. Let stand 10 minutes, then drain thoroughly. Return vegetables to pot again. Add the remaining ingredients. Bring to a hard boil for 3 minutes. Pour into hot sterilized jars and seal. Additional Resources Learn about Hot Peppers.
