Peach Cobbler Filling Ingredients - 2 tablespoons cornstarch
- 1/4 cup light brown sugar, firmly packed
- 1/4 cup honey
- 1/2 cup water
- 6 cups sliced peaches
- 2 tablespoons butter
- 1 1/2 tablespoons lemon juice
Batter Ingredients - 1 cup cake flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons softened butter
- 1 egg slightly beaten
Preparing Heat oven to 375°F. Put the cornstarch, brown sugar, and honey in a 1 quart saucepan. Gradually add the water, stirring constantly until smooth. Place over medium heat and cook until thickened, still stirring constantly. Add the peaches and boil for 1 minute. Remove from heat and add butter and lemon juice. When the butter has melted, stir and pour into a greased 9" x 13" baking pan. In a mixing bowl, combine all ingredients, beating until well mixed and smooth.
