Orange & Date Nut Cake
Ingredients
- 1 cup milk
- 2 tablespoons vinegar
- 1 cup shortening
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups flour
- 1 teaspoon baking soda
- 1 cup walnuts or pecans, chopped
- 1 cup dates, chopped
- Grated rind of 2 oranges
- Juice of 2 oranges
- 3/4 cup sugar
Preparing
Preheat oven to 300°
Mix milk and vinegar in bowl. Let stand until soured. In a large bowl cream
shortening and 1 cup of sugar until light and fluffy. Beat in eggs and vanilla. Add
mixture of flour and baking soda alternately with soured milk, mixing well after
each addition. Stir in nuts, dates and orange rind. Spoon into greased and floured
tube pan. Bake for 1 hour. Cook orange juice and 3/4 cup sugar in saucepan for 5
minutes. Pour over hot cake in pan. Let stand overnight. Remove cake to serving
plate.
