Mama Louise's Potato and String Bean Salad
Yield: 6 to 8 servings
Ingredients
- 2 pounds potatoes, peeled and cubed
- 1 pound string beans
- 1/2 cup corn or other light oil
- 3/4 cup wine or balsamic vinegar
- Pinch of garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
Preparing
In a large sauce pan of water, boil the potatoes until fork-
tender. Drain and set aside to cool. In a medium-sized saucepan, steam the string beans
until barely tender. Drain and run quickly under cold water to set their color. Set aside
to cool.
In a large bowl, combine potatoes, beans, oil, vinegar, garlic
powder, salt, and pepper. Mix well. Add more oil and vinegar if needed. Serve chilled or
at room temperature.
