Gumbroit
Yield: 4 servings
Ingredients
- 3 tablespoons olive oil
- 2 onions, diced
- 2 cloves fresh garlic
- 2 zucchini, cubed
- 1 eggplant, cubed
- 2 peppers, diced
- 1 pound fresh string beans, cut into pieces
- 2 fresh tomatoes
- 1 tablespoon oregano
- dash of salt
Preparing
In a large skillet, pour in the oil and add the diced onions and garlic. Sautè until golden brown. Add the fresh tomatoes, oregano, and salt. Stir and sautè for 5 minutes longer.
