Fennel and Tomato Salad
Yield: Makes 4 servings
Dressing
- 2 tablespoons olive oil
- 2 tablespoons white wine vinegar
- 1 clove garlic, finely minced
- 1 teaspoon finely chopped fresh mint
- salt and freshly ground black pepper to taste
Ingredients
- 2 medium-sized fennel bulbs, thinly sliced
- 1 medium-sized sweet onion, thinly sliced
- 2 tomatoes, cut into wedges
- 8 whole lettuce leaves
Preparing
In a salad bowl, mix the ingredients for the dressing. Add the fennel, onion, and tomato wedges and toss. Serve on a bed of lettuce leaves.
