Cranberry Bread Yield: 6 to 8 servings Ingredients - 2 cups flour
- 1 cup sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/4 teaspoon baking soda
- 2 tablespoons vegetable oil
- 3/4 cup orange juice
- 1 egg, well beaten
- 1 tablespoon grated orange zest
- 1 1/2 cups fresh or frozen cranberries, coarsely chopped
- 1/2 cup chopped nuts
Preparing Preheat the oven to 350°F. Grease a 9 by 5 inch loaf pan. In a bowl, mix together the flour, sugar, baking powder, salt, baking soda, and oil. Stir in the orange juice, egg, and orange zest. Mix until well combined. Fold in the cranberries and nuts. Spoon into the greased pan and bake for 1 hour, or until a wooden toothpick inserted into the center comes out clean. Cool and remove from the pan.
