Green Bean Salad With Red Bell Peppers - Serves 5

Ingredients

  • 1 1/4 lb. green beans
  • 10 shallots, finely chopped
  • 3/4 cup salad oil
  • 1/2 cup white balsamic vinegar
  • 2 tbsp water
  • 1/2 cup apple syrup
  • 8 oz. red bell peppers, cut julienne
  • salt and pepper to taste

Preparing

Cook green beans in boiling water until "aldente", cool green beans in chilled water. Whisk together oil, vinegar, water, apple syrup, shallots and salt in bowl, then add pepper to taste. Wash red bell peppers and cut in half. Remove seeds and cut peppers julienne. Marinate green beans and red bell peppers for one hour before serving.
