Arugula Salad
Yield: 4 servings
Ingredients
- 1 bunches arugula, washed and trimmed
- 1/2 head radicchio, washed and sliced
- 1 Belgian endive, washed and sliced
- 1 small onion, sliced
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- salt and freshly ground black pepper to taste
Preparing
Tear the arugula into bite-sized pieces and combine in a large salad bowl with the radicchio, endive, and onion. In a small bowl, combine the olive oil, balsamic vinegar, salt and pepper. Pour over salad and toss well.
